What's for Dinner?

Those veggies look great! Wish I could remember to snack like that more often. I made a big batch of homemade chicken soup with roasted tomatoes and garlic, spinach and cannellini beans. Some french bread and dinner's ready.

Nachos!
Fried up ground turkey with Tex Mex spice, chopped the olives and the lettuce, got out the tin foil, made little bowls, put in the corn chips, layered it with turkey mix and cheese and salsa, put the tin foil bowl into the toaster oven till heated through (about 7 minutes) and cheese is melted nicely and enjoyed wholeheartedly!

I made some muffins last night, and had a couple leftover. So those two muffins were breakfast this morning.

Lunch was at my Dad's house, so no cooking for me!

Then, I had to go to choir rehearsal, so I grabbed Taco Bell on the way home afterwards.

I didn't cook a THING today!

Tonight, I had one of my favorite southern treats.
Cornbread and Buttermilk!

I know, some of you are probably saying "YUCK!"
But, I just love that stuff.

But, I just love that stuff.

My mother was a Louisiana girl and loved cornbread and buttermilk. My father was from west Kansas and liked cornbread crumbled in sweet milk with a little sugar. I was an Air Force brat and the only thing I want my milk poured over is cereal and the buttermilk in front of someone else

I grew up right where I live now - in Indian Trail, North Carolina. My parents grew most of our food in a big garden. We had to help plant it, cultivate it, harvest it, and prepare it for Mama to can and freeze it. I remember walking down our long dirt street from the school bus, playing with our bird dog, stepping into the garden, and picking a tomato off the vine. I would then carry it inside, wash it off, and slice it up. Then, I would get two pieces of bread, spread them with Dukes mayonnaise, and cover a slice with tomato, sprinkle it with salt and pepper, put the other slice on top, and eat it.

Tomato sandwiches, and cornbread & buttermilk are still my favorite foods today.

Some other southern things I like are fried liver mush slathered with mustard, fried country ham, and grits with red eye gravy, and fried apple pies.

Yeah! Someone else who eats tomato sandwiches. And all the other stuff is delicious. I never did the cornbread with buttermilk, though. The cornbread I've got in the fridge now has tex-mex spice and jalapenos in it. I dip in my soup. Happy Easter everyone! I'll be making multi-colored egg salad for my son-in-law later today, for some crazy reason it's his favorite!
