I made Buffalo chicken tenders ( I used a Copycat recipe from Chiles restaurant I found online) and put them on a salad made with Romaine, tomatoes, large chuncks ofcelery, scallions, cukes, blue cheese then Bleu cheese dressing fo hubbby and I . Delish. Delgram

Hi lialab! Gluten sensitivity/celiac is becoming more and more common, it seems--unfortunately. There are more and more gluten-free products hitting the store shelves lately--and they are pricey. My husband has intolerance to Soy. Being vegetarian like me, this presents quite a dilemma! We decided to try to figure out the source of his symptoms by eliminating soy, as he would get really uncomfortable after eating Soy meat-substitutes, such as Boca or Morningstar Farms. There is Soy in practically everything, so I had to read labels even more closely. But he started showing improvement almost immediately. Eventually we figured out that it is not stuff like soy lethecin, soy flour, etc that he has reaction to--it is the FORM the soy is in (burgers, "sausage" "chicken" etc. So he can eat stuff with soy products, but not the faux meat. We have adjusted to it. We also know another vegetarian who cannot eat Soy in any form.

Tonight we had leftovers, and there was some spaghetti with meat sauce, and salad. I like leftovers that I don't have to cook I can knit instead!!

Me too! Leftovers rock!
I eat a lot of them, because I live alone. It's hard to find recipes for just one person. Plus, I don't have a microwave, so I can't zap frozen dinners. My old microwave broke, and I decided to just live without it. I eat sandwiches or salads for lunch, and will occasionally heat a can of soup on the stove. A few times a week, I make a full meal, and eat leftovers for a few days. Tonight, I baked some sweet potato and carrot fries, and grilled some marinated chicken breasts. I got the chicken on sale a couple days ago, and marinated them as soon as I bot home. Olive oil, balsamic vinegar, lemon juice, Old Bay Seasoning, onion powder, rosemary, sea salt, and thyme. I grilled all 3 of them tonight on my George Foreman grill. Now I have two leftover. Will probably make a chicken sandwich for lunch tomorrow.

My chicken sandwich was good at lunchtime! :inlove:
I sliced up about half a breast of chicken, then sliced one tomato, and put some mayonnaise on bread for the sandwich. I had some leftover cream of tomato soup with it, and it was tasty.

Tonight, I made some kale chips. Tried them for the very first time. Not bad! You just break some leaves of kale into chip size pieces, spray them with olive oil, and sprinkle them with sea salt and cracked pepper. I also sprinkled some Old Bay Seasoning on mine. Then, you bake them in the oven at 350 degrees for 13 minutes.

I also put my leftover baked sweet potato and carrot fries on the same pan. Ended up having to heat them a little longer, to get them crispy.

Now, I'm drinking hot tea, and nibbling some dried apple rings I got at Trader Joes last week.

So, it's a veggie dinner, I guess.

I'll probably have some meat before I go to bed though. I still have a little bit of leftover spaghetti in the fridge.

It's amazing to see how there is more and more allergy. I knew about strawberry and nuts allergy, but celiac and soy is recent to me. And your right gluten free products are more and more present on the shelves but $6 for a loaf of bread is quite expensive. I'm not a vegetarian but I must admit I have my veggie days. And funny how the family do not even notice there is no meat. :P We love homemade bean and enchiladas. Special dinnerTonight for my husband birthday dinner. Smoked salmon for entrees, tomatoes and boccocini cheese salads and surf and turf plus birthday cake and Ice cream. I guess I need a little run down the street ;)
