What's for Dinner?

Tonight, I made Turkey Chili. Yum.
It's a very mild chili, with a satisfying simple flavor.

1 pound ground turkey
1.5 Tablespoons olive oil
1.5 Tablespoons Chili Seasoning (see recipe below)
1 can chopped tomatoes
1 can dark red kidney beans
1 can light red kidney beans
1/2 cup shredded cheddar cheese
2 Tablespoons grape jelly
Sour cream (if desired)

*Chili Seasoning
In a small bowl, combine the following:
2 tablespoons chili powder
1 teaspoon salt
1 tablespoon seasoned salt
1 teaspoon onion powder
2 teaspoons cumin
1/2 teaspoon garlic powder
1 teaspoon oregano
Stir chili seasoning ingredients together well, then put into airtight container.

Using large stockpot, pour in olive oil, then add the ground turkey. Swish it around to cover the bottom of pan with olive oil. Brown the meat until it is no longer pink.

Sprinkle 1.5 tablespoons of chili seasoning on the meat, then add tomatoes and kidney beans. (do not drain the beans or tomatoes) Heat to a low boil, then cover and cook on medium low for 8 minutes. Stir well.

Sprinkle cheddar cheese over the top, but don't stir it in. Replace lid, and cook on low for 4 minutes to melt the cheese. Stir well.

Add grape jelly, replace lid and let it melt for 2 minutes. Stir well.

Now, your chili is ready. If there is too much liquid for your taste, you can add a teaspoon of flour to thicken it. (It works best if you mix the flour in a small bowl with a bit of the liquid, then stir it well before adding it to the chili).

Place in bowls with dollops of sour cream. Serve with tortilla chips.

Wow. Just discovered this topic! I'm going to try the spaghetti sauce, taco soup and Chili for sure! I am the lone female in a house full of males....one hubby, three teenage boys with bottomless stomachs, and two male cats! We NEVER have leftovers here, and sometimes I can't even cook what I had planned because vital ingrédients have disappeared from the cupboards since the last trip to the store. Tonight, though, the question here is who is going to help make dinner? I think we're getting close to ordering out.....

I felt that way tonight, after teaching piano lessons. I just wanted to drive-thru Taco Bell.
But, I forced myself to come home, and heat up my leftover chili. It was still yummy! :D

One of my sons and I had grilled cheese. Couldn't be bothered to cook more than that. Too busy finishing the knitting. Tomorrow should be a good day to cook though!

Tell me about the grape jelly ingredient. What does it actually do? Do I need to put it in or can I substitute with wine? (still in grape family..... ). We don't do a whole lot of jelly or jam around here.

The grape jelly is my "secret ingredient". ;) I always add a big spoon of grape jelly to spicy dishes like this. It adds a "sweet, comfort" taste to it. Probably the sugar is what makes it happen.

Tonite is homemade pizza! I make the dough in my bread machine. I will top it with mushrooms, Kalamata and black olives, maybe some sundried tomatoes. Using Kraft mozzarella with Philly cheese. Not sure if pizza will be round or square.

Left over chili is the only way to fully savour the flavour! I mean, if it can ever last that long! It is great the first day, but it is best every day after that it can last! Everything melds together and becomes fuller bodied. Chili is the only thing in the world that I will ever say this about!
:)
I need recipes that use ground chicken/turkey instead of beef or pork (allergy) or anything soy or onion or ...
ya, the allergy and intolerance level in this house is high!
Tonight is a date night, so we are heading out for dinner!

Chili and Spaghetti are both great the next day.

I would think that you could substitute ground turkey or chicken in ANY ground beef recipe.
I do it all the time. They work quick and easy with Hamburger Helper. :)
