What's for Dinner?

Cornbread and Buttermilk! :D

I know, some of you are probably saying "YUCK!"
But, I just love that stuff.

We used to eat corn bread fresh and warm from the oven covered in melted butter and maple syrup! (Northern version....). Don't know about buttermilk, but it sounds like a savory version of strawberry shortcake and cream, which I lové! Do you pour it over the cornbread when it's warm?

Shandeh wrote:My parents grew most of our food in a big garden. We had to help plant it, cultivate it, harvest it, and prepare it for Mama to can and freeze it. I remember walking down our long dirt street, stepping into the garden, and picking a tomato off the vine. I would then carry it inside, wash it off, and slice it up. Then, I would get two pieces of bread, spread them with Dukes mayonnaise, and cover a slice with tomato, sprinkle it with salt and pepper, put the other slice on top, and eat it.

Tomato sandwiches, and cornbread & buttermilk are still my favorite foods today.

My parents were much the same. They were both raised on farms and were practically self- sufficient for food. Nothing went to waste. My sister and I Grew up in the city, but our parents found friends on farms who let them plant huge gardens. We were never done weeding and spent many Saturdays going out to tend that garden. Then there was all the shelling peas, shucking corn, canning peaches and tomatoes. We used to cut blanched corn off the cobb, put it in little plastic baggies, inside waxed cardboard boxes and then freeze. That was before Ziploc!

M'y kids today love to pick fresh tomatoes and make tomato sandwiches. I'm glad I passed down that tradition to them. There is nothing like à juicy, vine-ripened tomato! Now my mouth is watering!

Homemade spicy pepper and corn bisquit with sharp cheddar, fresh tomato and a sunny side up egg!

Oh, my! So much better than an egg mcmuffin! How do I make the spicy pepper and corn biscuits? They would go over well here!

Yep. Us too. And a nice crunchy piece of lettuce. Bacon is optional; sometimes we don't have any left or are too hungry to wait for it to cook!

Tonight we had 13 bean soup made with the ham bone from this week-end. I crocked it overnight and no cooking to do today. Was a Nice comfort food for a cold, rainy day.

Yes! It tastes best when the cornbread is hot from the oven, and the buttermilk is not too cold. I save the leftover cornbread and heat it in the microwave if I want more later, but it's always best straight from the oven.

Funny thing though, I don't like buttermilk by itself. Only with cornbread.

By the way, the cornbread should NOT have sugar in the batter if you plan on eating it with buttermilk.

Tonight was salisbury steak and gravy, mashed potatoes, and roasted brussels sprouts with bacon and bleu cheese crumbles!!!! Since my toddler and husband don't care for brussels sprouts I cooked some peas (how boring) for them. I could have just eaten the brussels sprouts and been perfectly content!!!

I have learned to love brussels sprouts, but I didn't like them when I was younger.
